The producer

At Antugnac in the Haute Vallée de l’Aude, Domaine Delmas farms 31 hectares in one of the coolest sectors of the Limoux appellation. The domaine has practised organic farming since 1986, making that commitment a working foundation rather than a recent claim. Its range follows the breadth of local wine culture: traditional-method sparkling wines sit beside still Limoux whites and high-valley Pinot Noir. Mauzac, Chardonnay and Chenin Blanc connect the cellar directly to Limoux, while Pinot Noir reflects the elevation and cooler conditions of the upper Aude valley. The current published range includes long-standing cuvées such as Tradition, Mémoire and Blanquette Ancestrale Doux, alongside L’Envol, Le Passeur and Le Grand Saut. The latter is a pure Pinot Noir under the IGP Haute Vallée de l’Aude; Le Passeur is a white Limoux cuvée. Together, the wines present a focused view of an organically farmed family estate.
