Jean-Marie and Maria Angeles Pasquetto established Domaine Pasquetto in 1992, taking over vineyards connected to the family’s earlier work in the area. The estate grew across La Digne-d’Amont and Pauligne, on the western, ocean-influenced side of the Limoux appellation, and today extends over roughly 24 hectares.\n\nTheir son Clément, a trained oenologist, joined the domaine in 2023 and is developing the next chapter of the family estate. The vineyard work emphasises cover crops, mechanical cultivation instead of chemical herbicides, manual work in the vines and agroforestry around the parcels. The range now combines parcel-focused Chardonnay, Pinot Noir and Mauzac with traditional-method Crémant de Limoux, while retaining the family’s close connection to the local terroir.
